This week’s lunch

This is what I’ll be eating and I cannot wait.

It’s the Crispy Sweet and Sour Tofu recipe from Vegan Yum Yum and it is delicious!

This tofu would be great with any dipping sauce.

I steamed some peppers and tossed in some pineapple and leftover broccoli.

The tofu could also be prepared using the dry fry method and then tossed in the sauce for a healthier version. It won’t be as crispy but it will taste delicious.

I also tried a new brown rice technique from Saveur. It was sooo much easier than the other method I had tried.
