Herbes de Provence Oven Fries

Fancy seasoning. Simple recipe. That's what we have right here! Adapt it to suit your taste and I'm sure it will become your go to roasted potato recipe.

Herbes de Provence Oven Fries

2 pounds red-skinned potatoes, washed
1-2 tablespoons extra virgin olive oil (EVOO), enough to coat
1 tablespoon herbes de Provence or dried parsley, sage, rosemary and thyme, combined
½ tablespoon grill seasoning, such as McCormick brand Montreal Steak or Poultry Seasoning or ½ teaspoon each salt and pepper

  1. Pre-heat oven to 450°F.

  2. Line a cookie sheet with foil, for easy clean up.

  3. Cut potatoes into wedges and drop onto cookie sheet.

  4. Coat potatoes in oil,

  5. Combine dried spices and grill seasoning or salt and pepper and sprinkle over the potatoes. Make sure they are evenly coated.

  6. Roast, turning once, for 25 minutes.
