White Bean Dip

Beans are a nutritional powerhouse! I once read that they did more to lower cholesterol than oats.

Lots of people say they don't like beans, but they really don't know. Maybe they don't like the way they've been prepared for them before, but the truth is unless you've had a food prepared several different ways...by someone who knows what they're doing, you can't say you don't like it. And we all know that many of our parents didn't do vegetables and beans any justice when they cooked them for us when we were young.

White Bean Dip

Inspired by many recipes on the internet

Yield: 2.5 cups

2 cans cannellini beans, rinsed and drained 1/4 cup water 1 lemon (juice and zest) 2 tablespoons olive oil 1 teaspoon garlic powder 1 teaspoon rosemary 1/2 teaspoon salt

  1. Add all of the ingredients to a food processor or blender process until smooth.

  2. If you are using a blender, add the beans last.
